MORE butter? Yes, please!

For some recipes, you just can’t beat the taste of real butter. But the chief cook of Planet Cheapskate always hesitated when it came time to replace (yet another) stick or pound, until alert friend (and proud fellow Cheapskater) Lorri turned us on to a tasty butter extender. By following these simple instructions, you can cut the price of butter by at least one-half—up to two-thirds, depending on how you mix it. Like everything Lorri makes, it’s also tasty and healthy—no transfat!

Lorri’s Butter Extender Recipe
Use 1 cup of oil (non-GMO safflower or sunflower oil are recommended) to one pound (2 cups) of butter. The butter can be salted or unsalted, but it must be thoroughly softened so take it out of the fridge well ahead of time.

When the butter is completely softened, whip it well. Next, whip it again, this time adding the oil. You can add more or less oil as you like, aiming for whatever spreading consistency you prefer. Chill well in a glass container, and always keep your concoction in the fridge, as it will get too soft if you leave it out.

We recommend safflower or sunflower oil for everyday use. Lorri also writes that olive oil is fine to use: “just remember though that the taste might be too strong for pb & j sandwiches (but would be great for other things like sautéing or garlic toast!)!”
